Dal Bati Churma

Dal Bati Churma is almost like the national dish of Rajasthan. It is prepared using whole wheat flour, roasted over firewood. The Batis are nothing but hard round-shaped dumplings that are crispy on the outside and soft on the inside. The Dal is made up of lentils that are soaked in water overnight and later cooked over firewood with added spices.


The Churma is the crushed Batiis dipped in ghee and mixed with sugar or Jaggery. The three items – baked Bati, Dal and Jaggery blended Churma – are combined to make a hearty and delicious meal. You cannot leave the golden city of Jaisalmer without trying this classic dish. It is part of every menu of a Rajasthan palace wedding.

Laal Maas

Laal Maas is the traditional red mutton curry that is the royal cuisine of Rajasthan. It is prepared using red meat (Maas) cooked with a thick spicy combination of mathania chilies, and yogurt. The red chilies give it the rich red color and fiery taste. You can ask for a milder version of Laal Maas, which is cooked with variation in the spice level. 



The accompaniments with this dish are either aromatic rice or the chapatti (Indian flatbread). This dish goes into every menu of a Rajasthan palace wedding. Laal Maas, in the yesteryears, was considered a royal dish and was consumed only by the royalty.

Ker Sangri

It is a traditional cuisine prepared with dried Ker berry and Sangri beans. This dish is famous in the Marwad region of Rajasthan and places like Jaisalmer which is predominantly a desert. In such sandy areas, the soil allows only berries and beans to be harvested.
